Evaporated milk is a milk product, usually sold in cans, that is made by removing about 60 percent of the water from ordinary milk. On a side note about evaporated milk, you can convert evaporated milk to back to regular milk simply by diluting it with an equal part of water — so add half a cup of water to half a cup of evaporated milk. But I have to fill you in on a secret here.

It's a great base, but a bit tasteless. Wish there was a way to make the cheese stand out. It's so bland. I'm sorry you found it bland, Amy! It was very flavorful for me.
